This week, I’ve been living off of fast food because I didn’t want to go to the grocery store and the only thing I have to eat in my house is pasta. It’s been a busy week, guys.
I pretty much always keep noodles and cheap tomato sauce in the house for when I’m feeling too lazy to make the drive to the store, but I’ve gotten tired of making the same old meal over and over again that just sits in the fridge because it’s too boring to eat.
So today I decided to try something new.
Instead of sticking with my old, tired spaghetti and tomato sauce combo, I went with a roasted red pepper sauce and ziti noodles instead. It’s super easy, the only thing that really took any effort was chopping an onion. So here it goes:
This is everything you will need, most of it is stuff that you probably already have in the kitchen (because if I already have it in mine then there’s no way other people don’t.) I found everything at Walmart, so you don’t even need to make a special trip to any of those fancy organic stores or anything.
Start off with a tablespoon of olive oil and 2 tablespoons of butter in a large sauce pan. While that’s melting together, start cooking the noodles. This recipe requires about a pound of noodles, and they take about 10 minutes to cook.
Once that butter is melted, throw half of a chopped onion and 3 cloves of garlic into the mix and cook until soft. This should only take about 3 minutes. I just used about 1 and a half spoonfuls of pre-minced garlic.
Then, add 16 oz of roasted red peppers. These come in a can, so it’s super easy. I had a bit of trouble finding them, but if you look in the pasta sauce section of the grocery store they should be there. Heat those up with the onions and garlic for about 5 minutes so they’re nice and soft.
Once it’s heated up, throw all of that stuff into a blender and puree it. The sauce shouldn’t be completely smooth, but you should not be able to see any large chunks. Then, dump the sauce back into the sauce pan. Add a cup of chicken or vegetable broth and 1/4 cup heavy whipping cream.
This is one of the reasons I love this recipe, because it doesn’t have to use any meat products if you don’t want it to.
Grab some basil and parsley and add it into the mix with the heat on low. Add more parsley than you think should really be necessary (about 2 tablespoons) and a pinch or so of basil.
Throw the pasta in the pan and mix in half a cup of parmesan cheese. Then ta-da! It’s done!
This is super great for when you get bored of making the same pasta dinner over and over again, or if you don’t have a lot of time to put up with recipes that require a ton of prep time. Pretty much everything comes straight out of a jar.
